Black Bean Soup


  • one tablespoon of canola oil
  • one small onion, chopped
  • one tbs. chili powder
  • one teaspoon ground cumin
  • two cans of black beans
  • three cups of water
  • half a cup of prepared salsa
  • salt
  • lime juice
  • 4 tbs. of reduced-fat sour cream
  • 2 tbs. of fresh chopped cilantro.

Cooking instructions

You heat the oil in a large saucepan and then you add the onion and stir until it softens. Next, you add the chili powder and cumin and cook for one more minute, while stirring. Add the beans, water, salsa and salt and bring to a boil. Reduce the heat and let it simmer for ten minutes. When it’s done, remove it from the stove and stir in the lime juice. If you like, you can puree half of the soup in a blender and mix it all back, making a creamier soup. Serve it with sour cream and cilantro.
