Red Lentil Soup Recipe

The lentil is a plant from the legume family that is common in Mediterranean, South and West Asian cuisine. It comes in various colors, like yellow, green, brown, black and the more popular red lentils. They are a very healthy source of protein and the essential amino acids isoleucine and lysine. Furthermore red lentils also contain an enzyme that helps digestion. The most common way of cooking lentils is to make lentil soup. There are hundreds of types of lentil soups but we shall focus on some guidelines for a delicious red lentil soup recipe.

The Egyptian red lentil soup recipe


  • 5 cups of vegetable broth or water
  • 1 cup of dried red lentils
  • 2 cups of chopped onions
  • 2 cups of chopped potatoes
  • 8 cloves of garlic
  • canola oil
  • ground cumin
  • turmeric

-fresh cilantro
-fresh lemon juice

Cooking instructions

You add the first five ingredients in a pot, covering them and let them to boil. When they reach boiling point you decrease the heat and let them simmer for 15-20 minutes until the lentils and the vegetables are nice and tender. Meanwhile, heat the oil in a saucepan and add the cumin, turmeric and salt, cooking and stirring for a couple of minutes. Leave the mix to cool a bit then pour it in the pot and stir. If you like creamy soups, you can puree the mix in a blender but not before adding some lemon juice for relevance.

  • olive oil
  • two large onions
  • 2 cloves of garlic
  • 2 tablespoons of ground coriander
  • ground cumin
  • turmeric
  • sweet paprika
  • cinnamon
  • salt and black pepper
  • 7 cups of vegetable broth
  • fresh parsley
  • cilantro
  • 1 can of crushed tomatoes
  • 2 cups of red lentils

Cooking instructions

Start by heating the olive oil in a saucepan at medium heat. Add the chopped onions and cook them until tender. Next, you throw in the garlic and all the other spices mentioned above and cook them together for a minute. Now it’s time for the broth and the tomatoes, which have to be boiled in advance. When this is done, pour the mixture in a slow cooker and carefully pour the lentils in while constantly stirring. Cover the cooker and leave for about 5 hours on high or 10 hours on low, until the lentils are tender. When time’s up, stir in the lemon juice, parsley, cilantro and pepper flakes and cook on high heat for ten minutes. If you want it to be ready faster use a normal pot instead of a slow cooker.
