  • 6 cups chicken stock
  • 1 chicken breast
  • lemongrass stalk
  • spices: 4 kafir limes leaves, 1 thumb sized grated ginger, 2 minced red chilies, , 1 tbs brown sugar, 1 handful coriander leaves and 1 handful basil leaves
  • 1 cup sliced Shiitake mushrooms
  • 1 can coconut milk
  • 2 tbs. Lime juice
  • 2 tbs. fish sauce
  • 3 sliced green onions
  • optional: other vegetables ( bell pepper, cherry tomatoes..), wheat or rice noodles.

Despite the exotic nature of this soup, it is just as easy to make as all the other chicken soup recipes. You start by mincing the lower portion of the lemongrass stalk. Place the chicken stock in a soup pot over medium heat. Once it starts boiling you can add the chicken breast, the mushrooms, the fresh chilli, the kafir leaves and the upper part of the lemongrass. Let the mixture boil until the chicken is cooked. Once the chicken is ready, you can turn down the heat a little bit. Continue by adding the ginger, the coconut milk, the fish sauce and the optional vegetables. Simmer the mixture for a minute and then add the lime juice and continue stirring. At this point you should also turn down the heat to the minimum point.
