The Spiced Carrot Lentil Soup Recipe

Posted on Jun 13, 2014

The lentil is a bushy plant of the legume family, grown for its edible seeds that can be used for vegetarian or meat soups. It has been a part of the human diet for thousands of years, being one of the first plants to be domesticated in the Far East. It comes in various sizes and colors, ranging from yellow to green, red-orange, brown or black. Depending on variety and quantity, the cooking time for lentils ranges somewhere between 10 and 40 minutes. They are mainly used in South Asian, West Asian and Mediterranean cuisine, and they are often prepared together with rice, which has about the same cooking time.

There are numerous lentil soup recipes, as result of this vegetable’s nutritional value and healthy qualities. You can cook clear lentil soups, or thick, creamy soups, by adding dehulled yellow or red lentil. Beside soups, lentils also make a great addition to stews and cold salads. Unlike other legumes, lentils need no soaking time; they just have to be cleared of debris, rinsed and drained. A lentil soup recipe can also be prepared in slow cookers, but you have to add a teaspoon of oil to prevent them from sticking to the edges or blocking the safety valve.

An important tip when making a lentil soup recipe is to add the salt after they’ve cooked, as salt toughens the seeds. Tomatoes, wine and other acidic ingredients prolong the cooking time, so they should be added only after the lentils have become tender enough. Lentils can be seasoned generously and they are a good substitute for meat because of their high content of protein. Another thing that you must keep in mind when cooking with this legume is not to mix new lentils with older ones, that have lost some of their moisture, as this will result in an uneven cook. If you are looking for a less than ordinary lentil soup recipe, the Spiced Carrot Lentil Soup is the perfect choice.
