Classic Minestrone

Ingredients
2 tablespoons olive oil
1 diced celery stalk
1 chopped red onion
2 peeled and diced carrots-medium sized
1 peeled and diced large potato
15 ounces peeled and diced tomatoes
¼ head green cabbage, cored and sliced
15 ounces cannellini beans
½ green beans cut in 1 inch pieces
1 minced garlic clove
red pepper flakes, fresh rosemary, salt, pepper,, fresh basil and grated Parmesan

Instructions
Start by heating the oil in your soup pot. When the oil is heated, add the onion, the celery, ¼ teaspoon of red pepper flakes, 1 ½ teaspoon of sea salt, ¼ teaspoon pepper and 1 teaspoon rosemary. Leave the mix over medium heat and stir until the onion is translucent. Add the tomatoes and cook until their juice evaporates. Continue by adding the potato, the cannellini beans, the cabbage and about 7 cups of water. When it starts boiling, you can add the green beans. You can now reduce the heat to the minimum and cook for about 20 minutes until all the vegetables are tender. Add salt and pepper according to your own taste and also add the garlic and ¼ cup freshly sliced basil. When you serve this delicious soup, you can sprinkle some Parmesan on top of each bowl.

It is always better to cook with fresh seasonal ingredients than to use canned or frozen products. For example, you can use zucchini instead of green beans, or kale instead of cabbage.
