The Spiced Carrot Lentil Soup Recipe

The lentil is a bushy plant of the legume family, grown for its edible seeds that can be used for vegetarian or meat soups. It has been a part of the human diet for thousands of years, being one of the first plants to be domesticated in the Far East. Ingredients

-two tablespoons cumin seeds
-two tablespoons olive oil
-half a cup of milk
-pinch chilli flakes
-20 ounces washed and coarsely grated carrots
-3/4 cup split red lentils
-4 cups vegetable stock
-4 ounces
-plain yoghurt and naan bread

Cooking instructions
You start by heating a saucepan and you dry fry the cumin seeds and the chilli flakes. They will be ready after one minute when they start jumping in the pan. When they are ready you take half of the seeds and you put them aside for later use. Next, you add the carrots, the lentils, the oil, the milk and the stock. You set the heat on the high level and you wait for the mixture to start boiling. When it does you simmer it for about 15 minutes until the lentils soften. Next, you take it away from the heat and you allow it some cooling time. When it is no longer hot you use a blender or a food processor in order to make the mixture smooth and creamy. For serving you reheat the soup to the desired temperature and you season it with yogurt and the remaining seeds. It is best served with warm naan bread.
