Healthy and Delicious Summer Soup Recipes

One of the best things about summer are the wonderful choices of produce. If you are a fan of healthy, summer soup recipes, we have some suggestions that you will simply love. The stars of our recipes are the most beloved summer vegetables: tomatoes and sweet corn. The first recipe is very simple and requires very little time to be ready. The second recipe is slightly more complicated but the end result is a real treat.

The spicy pepper and sweet corn soup
Ingredients
4 ears sweet corn
1 red pepper
3 jalapenos
1 serrano without seeds
half of a red onion
1 tbs. Olive oil
3 cups vegetable broth
lime juice
salt, minced cilantro
half of a cup heavy cream
1 1/5 avocado
Cooking instructions
Heat the olive in a soup pot, add the diced onions and peppers and cook them until the onion is translucent. Remove the corn from the cob and add it to the pot. Cook for another two minutes and then add the broth. Season with some salt and bring the mixture to a boil. Simmer the soup for 20 minutes and then take it away from the heat and let it cool off for a while. Once it is no longer hot, use a blender or a food processor in order to puree the soup. Once it has the desired consistency, you put it back in the pot, turn the heat to the medium and stir it while adding the minced cilantro and the cream. Cook for a two more minutes. When serving this soup, garnish it with slices of avocado and sprinkle some cilantro over it. As all summer soup recipes, this creamy corn soup is very simple and can be prepared with minimum effort.

Roasted tomato soup with grilled cheese croutons
Ingredients for soup (4 servings)
4 lbs. Plum tomatoes
1 diced yellow onion
4 whole peeled garlic cloves and 2 minces cloves
4 tablespoons olive oil
one third of a cup red wine
2 cups chicken broth
1tablespoon balsamic vinegar
three thirds of a cup tomato paste
one quarter of a cup finely chopped fresh basil
1 teaspoon sugar
half of a teaspoon red pepper flakes
1 tablespoon kosher salt
half of a tablespoon ground pepper
half of a cup cream (heavy or fat free- depending on your taste)

Ingredients for croutons
4 pieces of whole wheat bread
your favorite type of cheese
butter

Cooking instructions
Start by preheating the oven to 375. While the oven is heating you can cut the vegetables. The tomatoes should be cut lengthwise while the onion should be cut in large chunks, Put the onion, tomatoes and the 4 whole cloves of garlic on an baking sheet lined with foil. Drizzle the vegetables with three tablespoons of oil and season with some salt and pepper. Place the baking sheet in the oven and roast the vegetables for about an hour.

While the tomatoes are roasting, you can get started on the croutons. Spread a thin layer of butter on both sizes of the bread. Now you will need a skillet in order to make the croutons. Place the bread on the heated skillet and allow it to get brown and crispy. Once a side is done flip the bread to the other side. Place a piece of cheese on the grilled side and wait for the other side to be ready as well. Once both sized of the bread are done, put the one without cheese on top of the one with cheese and thus making a grilled cheese sandwich. Do this with the other two pieces of bread as well. Once you are done put the sandwiches aside so that they can cool off.

When the roasted tomatoes are done, you take them out of the oven and you use a blender or a food processor in order to puree them. In the meantime, heat a tablespoon of olive in a soup pot. Add the minced garlic and the red pepper flakes. Season with salt and pepper and cook for a couple of minutes. Pour the tomato puree over the minced garlic and pepper flakes. Add the paste, the basil, red wine, chicken broth and vinegar and stir until the flavors are all mixed. The sugar is optional, but you can add it if you feel that the soup is too sour. When the mixture starts boiling, reduce the heat to the minimum and simmer for about 45 minutes. Taste it regularly and adjust the taste with salt, pepper and sugar if necessary.

Once the soup is simmering, you can get back to the croutons which are probably cooled by not. Use a sharp knife in order to slice the grilled cheese sandwiches in crouton sized pieces. When the soup is dove, serve it with the croutons on top and a couple of leaves of fresh basil. Although this soup is slightly more complicated than the first one, it is one of the best summer soup recipes and you should definitely give it a try.
