Beans are amongst the first crops cultivated by people from the beginnings of civilization. Broad beans, or fava beans as they were known, were being gathered from the wilderness in Afghanistan and the Himalayan foothills. They were so precious and important that they would be buried along pharaohs in ancient Egypt and were mentioned in Homer’s Iliad. Since then, they have been and still are an important source of protein for people all over the globe. Though some 40,000 types of beans are known, only a few are used for mass production to feed humans or animals. However, there are some types like the red and kidney beans that contain a toxin which must be removed through boiling.

A very popular way of cooking beans is by making bean soup. There are hundreds, possibly thousands of bean soup recipes, but this article will only deal with one recipe and a few cooking tips.

Bean soup recipes are hearty and usually budget-minded, so anyone can try them. Take for example, the Senate bean soup, a simple and tasty recipe. The ingredients you’ll be needing are:
– 2 pounds of Michigan navy beans
– 4 quarts of water
– one thick slice of ham, chopped
– one tablespoon of butter
– one medium onion, chopped
– salt, pepper and fresh parsley leaves.

Cooking instructions
You rinse the beans in hot water until they become white, then you put them in a stockpot. Add water and bring to a boiling point, then reduce the heat and simmer for 3 hours. Meanwhile, heat the butter in a small pan and sauté the onion until it becomes brownish. Add that to the pot, then remove two cups of the mixture and puree it in a blender, then pour it back in the pot. Now it’s time to add the ham. Before serving, season the soup with salt and pepper and garnish with the parsley.

Bean soup recipes like the one above, are regularly easy to make and full of taste. Still, just because it is a common food it doesn’t mean you can’t cook something special. The Tuscan Chard and Cannellini Beans Soup is an interesting thick soup made Italian style, and though it requires more ingredients it’s ready in less than an hour. The great thing about beans is that you can cook them in so many ways. People who don’t have a lot of time to cook can find bean soup recipes for the slow cooker and let that simmer for the whole day, until returning from work.
